Polenta, Easy and Delicious Food


Polenta is so easy to make, and is delicious.  YUM!!!  It’s made of corn, you cut it into slices and cook it/fry it in a pan with oil.  Takes a few seconds/minutes. Serve polenta with salmon, with pasta and veggies for dinner, with eggs and bacon and spinach for a nice breakfast, etc.  Refreshing, satisfying, and delicious!

  1. This was a godsend when caring for Sharon post-wisdom teeth extraction. You can also take these store-bought logs of goodness and heat them with milk and mush it up into a “creamy” polenta (the other end of the spectrum for traditional polenta).

  2. OR – you can get all Indiana style and make fried mush with “polenta”, which is really like a more solid version of grits. Fried mush: cut slices off the log, fry in oil until a crispy shell surrounds your mush, and drizzle maple syrup on top. YUM.
